
Eggs are kind of like a supplement for your essential amino acids. They have Lutein in their yolks which is good for your eyes (although you probably need to supplement or eat kale everyday to get the amount shown to help your eyes). The yolk is where most of the vitamins and nutrients are - so eat the whole egg. Another great nutrient in the yolk is choline, which may help prevent fatty liver, and is important in memory and muscle control. Choline is in all cell membranes and is very important for pregnant women. It is the precursor to a neurotransmitter that can help with memory. In fact I was just reading about the benefits of choline for those who have Parkinsons. Do not skip eating your egg yolks, so you can get the benefits of choline and all the other nutrients.
